The aim of the project is to explore the potential of soy for a sustainable bioeconomy. The project uses a unique combination of modern omics approaches and citizen science to establish soybean lines with tailored qualities and nutritional value for new products. Citizen science is a new approach where citizens create knowledge, in the proposed project by evaluating soy breeding lines in well over 1000 locations across Germany. In a complementary approach, a population of genetic resources will be established and studied using different omics approaches. In addition, breeding strains and genetic resources will be analysed for tofu quality to improve product quality in addition to nutritional value. In summary, the project will use state-of-the-art approaches that, when combined, will enable the establishment of soy with tailor-made ingredients for a sustainable bio-economy.
